Since the early 1800’s Baja California’s Valle de Guadalupe has been one of the most celebrated wine growing regions in Mexico. Pavo Real, Spanish for Peacock, is a unique blend of traditional European varietals made to express the soil and climate of this widely acclaimed wine region.
The wines are blended by prestigious and internationally recognized sommelier, Ian Cauble. Ian Cauble has been a Master Sommelier since 2012 and gained worldwide recognition when featured in the critically acclaimed documentary Somm, which documented Ian’s journey to pass the infamously difficult Master Sommelier exam.
Ian’s Blending Notes: “Pavo Real White Wine has fresh and ripe aromas of dried papaya, yellow apples, and preserved grapefruit. The palate is creamy, full-bodied with moderate acidity along with notes of preserved lemon and wet herbs, and a touch of oak spices.” – Ian Cauble
